Elizabeth Verzo, MS, RD, LDN earned her Bachelor of Science degree in Culinary Nutrition from Johnson & Wales University in Providence, RI and her Master of Science degree in Dietetics from Loyola University Chicago in Chicago, IL.  She completed her dietetic internship from Loyola University Chicago.  Additionally, she has certificates in weight management for child & adolescents and adults.

Elizabeth currently supports the Illinois State Board of Education grant with the University of Illinois Extension, providing trainings to foodservice staff.  Previously, Elizabeth worked as an Expanded Food and Nutrition Education Program (EFNEP) Educator, serving low-resource audiences in Chicago, IL.  Through the EFNEP program, participants are provided resources and classes focusing on MyPlate principles, with the ultimate goal of making positive behavior changes. 

Elizabeth previously served as Communications Chair for the DPG from 2014 – 2017 and is currently Chair – Elect.  Elizabeth is also a program reviewer for the Accreditation Council for Education in Nutrition and Dietetics.  Additionally, Elizabeth is on the selection committee for Loyola University Chicago, to select potential dietetic interns.

Elizabeth’s professional areas of interest include:  food insecurity, weight management, and working with families, particularly parents with children.  Elizabeth’s hobbies include:  cooking, baking, watercolor painting, and traveling.
